STUDY CONCERNING THE CHEMICAL COMPOSITION OF BUFFALO MILK

Abstract


Buffalo milk can be define as an integral secretion obtained because of the complet milking of healthy buffalo, excepting the period of 15 days before and of 7-10 days after birth. Milk producing is realised at the level of glandular tissue and the origin of the elements are the same like at the cows, but the number of the the cicles of each secretory cell in 24 hours is about 2-4 times, the frequence of those is one of the factors which determine and influence the intensity of milk secretion. Milk is the aliment that contain all the substances necessary for the development of the metabolique process which take place in the body, because of these qualities the including of milk and milky product is necessar in a rational diet.
